Like many people in our ward, we are part of a dinner co-op, which means that each of 4 girls choose a night to cook...and we cook for all 4 families. My night is Tuesday night, which means that I was lucky enough to get St. Patrick's Day on my night! So, thanks to Everyday with Rachael Ray, we made Green Eggs and Ham for everyone for dinner. ha ha. Hers looked prettier than mine, but that's OK...it was still fun to make them!
As a disclaimer...this is the note I stuck on top of the dish to take around...
Max enjoyed the washed-off ham, green scrambled eggs, and green milk in a green cup!

I love the green eggs and ham! Having fun with special thematic dinners is a great way to keep your dinner co-op fun. There are many times when you can use your imagination to present your own mood food when the moment strikes you. You can use any theme from films, books, cultural events as well as birthdays and holidays. I have one neighbor who made ratatouille for her co-op the night the movie came out. Last month I made a special meal for Mardi Gras complete with fun necklaces for all of the kids.
If you are looking for more creative ideas, some wonderful dinner co-op recipes, or just how to start a dinner co-op, take a look at our book or website:

-And enjoy all those wonderful meals you don’t have to cook along with the ones you are inspired to make!

Do you guys have plans on Monday? I have the day off, if you'd like to get together! I can come to your area too.
Love and miss you!
